Ingredients

  • 2 Tablespoons olive oil
  • 2 medium onions – sliced
  • 4 medium zucchini – sliced
  • 2 large tomatoes – cut into wedges
  • 4 ounces sliced fresh mushrooms
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon thyme
  • 1/4 teaspoon pepper

Directions

1. Pour olive oil in wok or large skillet and heat until it starts to smoke.
2. Add onion to skillet and stir-fry for 2 minutes.
3. Add zucchini and stir-fry for 8 minutes.
4. Add remaining ingredients and stir-fry for 2 minutes longer.

Serves 8
