Wash each leek well to remove any dirt from between the layers, then thinly slice.<br />
In a large saucepan, combine the leeks, broth, potatoes and garlic and heat to a boil.<br />
Reduce the heat to medium-low, cover loosely and simmer until the potatoes are tender, about 10 to 15 minutes.<br />
Stir in the milk and chives and simmer just until heated through but don&#8217;t boil.<br />
Sprinkle the feta cheese and serve.<br />

<p>1. Heat a large cast-iron or heavy metal skillet over medium-low heat.<br />
2. Place two slices of bread on a work surface, and cover each with a layer of Monterey Jack and a layer of cheddar cheese. Top with the remaining slices of bread.<br />
3. Generously butter both outer sides of the sandwiches, spreading butter all the way to the edges of the bread.<br />
4. Place the sandwiches in the skillet, and press down only lightly with the back of a spatula. Cook until golden brown on each side, 3 to 4 minutes per side, and the cheese has completely melted.<br />
