Ingredients

  • 1/4 cup chopped fresh parsley
  • 2 medium-size green peppers, chopped
  • 2 small onions, sliced and separated into rings
  • 4 large cucumbers, unpeeled and thinly sliced
  • 1 tbsp salt
  • 1/2 tsp pepper
  • 1/4 cup sugar
  • 1 cup EACH apple cider vinegar and water

Directions

Combine first 4 ingredients in a shallow dish; toss lightly.
Combine next 5 ingredients; mixing well.
Pour over vegetables, tossing to coat well.
Cover and chill at least 2 hours. Serves 12
