Ingredients

  • 2 onions, chopped
  • 3 lbs. catfish filets
  • 1/2 lb. butter or margarine
  • 1 T. sugar
  • 2 stalks celery, chopped
  • Salt & pepper to taste
  • 2 cloves garlic, chopped
  • 1 bell pepper, chopped
  • 4 cans tomato sauce
  • Chopped green onions
  • 1 can Rotel tomatoes, chopped

Directions

Saute onion, celery, garlic and bell pepper in butter. Add tomato sauce and Rotel tomatoes. Cook for 1 hour. Wash fish, and cut into 1-inch strips. Season catfish filets to taste and add to tomato gravy. Cook 30 minutes longer Just before serving add sugar and green onions. Serve over rice.
