3 Bean Salad - Mexican Style

Ingredients

  • 1 can Green beans
  • 1/2 teaspoons Pepper
  • 1 can Garbanzo beans
  • 3/4 cups Salad oil
  • 1 can Kidney beans
  • 1 package Taco seasoning mix
  • 1 cup Green pepper; chopped
  • 1/2 cups Red onion; chopped
  • 1 cup Cider vinegar
  • 1 cup Sugar
  • 1 1/2 teaspoons Salt

Directions

Drain canned beans, combine with green pepper and onion. Set aside.

Combine remaining ingredients, except taco seasoning.

Pour over vegetables, mixing well. Cover and marinate in refrigerator overnight or 24 hours, stirring occasionally.

Before serving, drain, leaving small amount of marinade to toss taco seas with salad.

    Ingredients

    • 2 pounds Quarted medium red potatoes
    • 1/4 cups Sliced green onions
    • 1 small Red or green bell pepper –Sliced
    • 1/2 cups Miracle whip. — salad dressing
    • 1 tablespoon Coarse ground mustard

    Directions

    Add potatoes to boiling water; cook 12 minutes or until tender. Drain.
    Toss with remaining ingredients; refrigerate.

    Makes 6 servings.

    Ingredients

    • 3 pounds Ground beef
    • 1 Bag (large) corn chips
    • 3 Envelopes taco seasoning mix
    • 1 Bottle (16-oz) Catalina salad dressing
    • 3 Heads lettuce; shredded
    • 1 Jar (12-oz) salsa
    • 3 cups Shredded cheddar cheese
    • 3 cups Chopped tomatoes
    • 2 cups Chopped onion
    • 3 cans (4.25-oz) chopped or sliced ripe olives; drained
    • 2 cans Ranch or chili beans; drained

    Directions

    Brown beef, drain.
    Add taco seasoning and prepare according to package directions. Cool.
    Toss with remaining ingredients in a large plastic bag or container.

    Ingredients

    • 1 medium Ripe peach
    • 3/4 cups Fresh OR frozen strawberries
    • 1/2 Banana; peeled
    • 2 cups Skimmed evaporated milk; chilled
    • 4 teaspoons Frozen orange jc concentrate
    • 1 teaspoon Vanilla
    • 4-6 ice cubes
    • Cinnamon; optional

    Directions

    Combine everything in blender except ice and cinnamon.
    With blender running, add ice cubes one at a time.
    Divide Smoothie into 4 chilled glasses and sprinkle with cinnamon.

    Ingredients

    • 6 unpeeled apples
    • 1 can crushed pineapple, drained
    • 1 lg. container Cool Whip
    • 2 T. sugar
    • 1/2 c. nuts

    Directions

    Dice apples. Add rest of ingredients, mixing well. Top with chopped nuts.

    Ingredients

    • 1 can mandarin oranges
    • 1 can chunk pineapple
    • 1 lg. container Cool Whip
    • 1 lb. cottage cheese
    • 1 (3oz) pkg. Jello (dry)

    Directions

    Mix and chill.

    Ingredients

    • 1 lg. pkg. lime Jello
    • 1 lg. container cottage cheese
    • 1 lg. can crushed pineapple, drained
    • 1 lg. container Cool Whip

    Directions

    Sprinkle Jello over cottage cheese; stir until mixed. Let stand until Jello is dissolved, about 30 minutes. Add fruit. Fold in Cool Whip. Makes 12 servings. Nuts may be added, if desired.

    Ingredients

    • 2 12oz packages of elbow macaroni
    • 6 hard boiled eggs
    • 1 cup thinly sliced celery
    • 1 red bell pepper, medium chopped
    • 1 green bell pepper, medium chopped
    • 2 tomatoes, medium chopped
    • 1 can drained tuna fish
    • 1 1/2 cups mayonnaise or Miracle Whip
    • salt and pepper to taste

    Directions

    Boil the macaroni until tender; then place the pan in the sink and run cold water over the macaroni until it is completely cooled down. Boil the eggs ahead of time, and run cold water over them until they are completely cool. Chop up the eggs into bite-sized peices.

    Put the vegetables, eggs, tuna, and mayonnaise in to a very large bowl.

    Stir until slightly mixed. Add macaroni and stir until completely mixed.

  • Tuna Vegetable Pasta Salad

    Ingredients

    • 1/2 lb uncooked rotini
    • 1 12-1/2 oz can tuna, drained and flaked
    • 2 cups thinly sliced cucumbers
    • 1 tomato, chopped
    • 1/2 cup sliced celery
    • 1/4 cup chopped green pepper
    • 1/4 cup sliced green onions
    • 1 cup Italian dressing
    • 1/4 cup mayonnaise
    • 1 T. prepared mustard
    • 1 tsp dill weed
    • 1 tsp salt
    • 1/8 tsp ground black pepper

    Directions

    Prepare rotini according to package directions; drain. In a large bowl combine rotini, tuna, cucumbers, tomato, celery, green pepper, and onions. In a small bowl blend Italian dressing, mayonnaise, mustard, and seasonings. Add to salad mixture; toss to coat. Cover and chill.

    Ingredients

    • 2 teaspoons lemon juice
    • 2 teaspoons sugar
    • 4 teaspoons soy sauce
    • 2 tablespoons ketchup
    • 2 tablespoons minced celery
    • 2 tablespoons minced fresh ginger
    • 2 tablespoons water
    • 1/3 cup rice vinegar
    • 1/2 cup peanut oil
    • 1/2 cup minced onion
    • 1/2 teaspoon minced garlic
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper

    Directions

    Combine all ingredients in a blender. Blend on high speed for about 30 seconds or until all of the ginger is well-pureed.
