Butter a 9″ x 14″ baking dish. Layer the bread with ricotta, crab, Jack and cheddar cheese and chiles.

Pat Fillets dry with paper towel. Combine spinach, Crab Meat, onion, mayonnaise, mustard and pepper. Spread an equal amount of mixture on each fillet; roll up from narrow end in a jelly roll fashion. Combine all ingredients except seafood and muffins. Gently stir in Crab Meat and Shrimp. Spread mixture on split muffins and cut each muffin into 6 wedges. Bag and freeze until needed.
